Perfectly Crispy Chicken

This chicken is so easy it almost feels like cheating to call it a recipe! I just had to share it with you; it's ridiculously delicious. Think you don't like chicken thighs? This will make you change your mind. It ranks as our favourite way to eat chicken and I make it at least once a week. What's not to love? Perfectly crispy on the outside, moist and juicy on the inside. The seasoning rub packs a lot flavour without having to marinate the chicken. This recipe even works with partially frozen chicken thighs, so it's perfect for that day you forget to plan dinner.

Pefectly Crispy Chicken

Yeild: 8 servings

Time: 40 min.

Variations: Option for AIP reintroduction of seeds.
Ingredients:
  • ​8 chicken thighs
  • 2 1/2 Tbsp. olive oil
  • 2 tsp. onion powder
  • 2 tsp. garlic powder
  • 1 tsp. sea salt or pink salt
  • 1/4 tsp. ground sage
**Optional with reintro of seeds:
  • ​1/2 tsp. mustard powder
  • 1/2 tsp. black pepper

Method:
  • ​Preheat oven to 425F. Line a large baking sheet with parchment paper.
  • Mix oil & spices in a large bowl. Toss chicken thighs in mixture until well coated. Place them evenly on lined baking sheet, skin side up.
  • Bake for 35 minutes (or until skin is brown & crisp).

Tip: Try this recipe with chicken legs, too! Just flip the drumsticks over halfway through the cooking.

This is with bone-in, skin-on chicken thighs in assuming? I'm not a liver of chicken thighs, but this looks pretty awesome! 😋

Yes! The cooking method and spices take it from icky-slimy chicken thighs to crispy & delicious! Similar to a crisp-skinned roasted whole chicken. Or you can use drumsticks instead. Let me know if you try it! ;)

I really like this recipe & have made it several times. I brush the oil on both sides of the chicken, mix the spices in a shaker bottle and sprinkle it on both sides of each chicken piece. Really tasty! Thanks so much for the recipe!
