AIP Ceaser Salad Dressing

You eat a lot of greens while following the Autoimmune Protocol. What better way to dress them up than a classic tasting caesar dressing? I tried a few different variations before I came up with this recipe. I am veeeerrry picky when it comes to caesar dressing. I make this for non-AIPers all the time and get compliments on it. So it passes the test! It has just the right balance of lemon, garlic, and creaminess. It is quite a garlicky dressing, though, so lower the number of cloves you use if that's not your thing. But trust me, it's delicious as is!

AIP Ceaser Salad Dressing

Yield: 2.5 cups

Time: 5 min.

Equipment: Blender, Vitamix or Stick Blender

Ingredients:
  • ​1 1/2 cups olive oil
  • 3/4 of a cup coconut milk
  • 1/2 of a large avocado
  • juice of one lemon
  • 1 tsp. balsamic vinegar
  • 5 large cloves of garlic
  • 2 Tbsp. nutritional yeast
  • 3/4 of a tsp. pink salt (or sea salt)
  • 1 tsp. dried oregano
  • 1/2 of a tsp. onion powder

Method:
  • ​Put all of the ingredients, except olive oil, in your blender. Blend until smooth.
  • While blender is running, pour the olive oil in very slowly (through the top lid trap) in a thin stream. (This emulsifies it and makes it thicker.)
  • Serve with chopped romaine.
  • I store the Dressing in a jar in the fridge for up to a week.

Variation: Use a stick blender instead. Follow all the directions except use your stick blender container or a medium mixing bowl.

Tip: This dressing is not just for salads. Try it as a dip for veggies or chicken strips!

Terrific! Creamy and delicious. I’ve always liked Caesar dressing but haven’t eaten it since going vegan. The other recipes I’ve tried weren’t nearly as good as this one. I had to use unsweetened almond milk as I didn’t have coconut milk, and I used two garlic cloves. This will be my new go to dressing.

I made a half recipe. Garlic was way too strong and bitter!!! And I have used a lot of fresh garlic for many years and love it! Will make again, with modifications. Thank you for the recipe!

Love, love, love. Oh my gosh this is my fav! I have to double the recipe. I put it on almost everything. I like Kal brewers yeast . I use it for a cheese, dressing, toppings over my AIP veges. Mine turns out lime green maybe because I use 1 cup of dark green virgin avocado oil. Thank you 💜
