Baked Sweet Potato Fries. AIP recipe. Paleo Autoimmune Protocol.

The sweet potato fry. Savoury, sweet, chewy, crispy, soft...I may be in love a little. These have been a staple for me while following the Autoimmune Protocol.
While there is not much to a baked sweet potato fry, the texture can be a little tricky to get to your liking. Here is my method. Lightly seasoned and baked to perfection. These make a great side to almost any meal.

Baked Sweet Potato Fries


​Time:
35 min.

​Yield: Serves 4-6

Ingredients
  • ​2 med sweet potatoes
  • 1 Tbsp. oil (melted coconut oil or olive oil)
  • ​1/2 tsp. pink salt (or sea salt)
  • 1/2 tsp. garlic powder
  • 1/2 tsp. onion powder
  • **Optional for AIP re-introduction of seeds: 1/4 tsp. black pepper

Method
  • Pre-heat oven to 425F.
  • Peel sweet potatoes. Chop into small fries, approx. 1/3 in. wide.
  • In a bowl, toss together the chopped sweet potato and all of the other ingredients.
  • Spread in a single layer on a large parchemnt lined baking sheet.
  • Bake for 18 min. Remove from oven & flip fries over with a spatula. Return pan to oven & cook 10 more min. Remove and flip fries again. Return to oven. Lower heat to 375F and cook another 5 min.
  • Serve warm.

Tip: Try dipping these in my Caesar Salad Dressing. Trust me, it's delish!
