Here's a scrummy one-pot meal that will warm you up. Perfect for fall & winter evenings!
"Chili?" You ask. "I thought this was an AIP blog. We can't eat that!" *tsk, tsk*
Yeppers! It is possible. Chili-less, bean-less, nightshade-free chili. Not just any chili, either. Hearty, zesty, creamy White Chicken Chili! This is an old favourite. I haven't been able to eat it in over a year, since I started the Paleo Autoimmune Protocol. This is a pretty amazing AIP adaptation, if I do say so myself! Plus, with all the vegetables and superfood ingredients like ginger, bone broth, & cilantro, your body will thank you.
So, how do we get the chili in the chili-free chili? The ginger adds warmth (no, sadly it's not super spicy, but it is a bit spicy) and the lime and cilantro give it tang and zip. The use of plantain here might seem odd, but it is starchy and neutral in flavour. It makes a wonderful bean substitute. This dish turns out nice and thick; the simmering zucchini thickens it for you. I love easy-peasy one-pot meals!
The recipe is compliant with AIP elimination phase. I have also added an option for those who have re-introduced seed based spices. Both ways are delicious!

Method:
TIP: Why not use your crockpot? Just leave out the lime juice & cilantro. At the end of cooking, take out chicken, shred it, & add it back in with the lime & cilantro.

I was referring to canned coconut milk. With high coconut percentage. 60-70% is good. ;) But just use what you can find!

Ashley, this chicken chili is so delicious and simple. Definitely worth trying out. I was sad when I had to give up plantains while battling Candida since I thought I would not be able to eat this. This chili is literally in my fridge everyday. I make a double batch and have it on hand for quick, tasty meals for a few days and when I run out, I do it all over again. But I digress, sorry! A great substitution I found for the plantains was rutabaga. A small dice works great. I brown split chicken breasts, them dump celery, onion, and the rutabaga in, working it around so that they end up coating the bottom of the pot and the chicken rests on them. Soften veggies, then continue with recipe, removing the skin and bones when you pull the chicken to shred it. Rutabaga takes longer to soften so it's good to start it earlier than you would plantains. I loved it so much, I never use plantains anymore. Rutabagas are cheaper, easier to peel and dice, and easier on my tummy.

I would not recommend the crock pot method. The coconut milk separated from the broth and it was edible but probably much better on stove.

When cooking with coconut milk in the crockpot you always add the coconut milk right before serving or it will separate
