This soup is deceptively simple. Simple is good. However, don't think it is short on nutrition or flavour. I recently bought an Instant Pot which is a pressure cooker/combo-cooker. It is a wonderfully useful tool to have in my AIP kitchen. I have used it every day since I opened it! I love how quick and easy it made making this nightshade free, paleo autoimmune protocol compliant BBQ sauce. The sweet potato fry. Savoury, sweet, chewy, crispy, soft...I may be in love a little. These have been a staple for me while following the Autoimmune Protocol. Let's admit it. Giving up bread products is difficult. While I don't eat a lot of them now I am on the AIP, I can still satisfy a craving once in a while. Like with this bread. It may not look like much, but don't be fooled. This dinner bread hits the spot; especially paired with soup, stew, or chili.
Are you ready for another look into an AIP life? This week's interview is with the lovely Meagen Ashley! Let's take a peek at how she makes AIP work in her busy life as a schoolteacher.
There's just something comforting about a creamy chicken dish. Warm and soothing, this recipe is hearty without being heavy. You have the option of using either white wine or bone broth in the creamy, coconut milk based sauce. Both ways are delicious! I find the finished product doesn't taste like coconut (good news for the coconut haters). In fact the primary flavour of the dish comes from the use of leeks. It's that time again! In our AIP Spotlight interview this week we are talking with Michelle Hoover. I am very excited to share this lovely lady's insights with you! Soups are my favourite way to get a variety of veggies and bone broth into my diet. I especially love a warm bowl of soup for breakfast in the winter. Or any meal, really. Soup is a staple for me on the Paleo Autoimmune Protocol. If you do it right, soup can be extremely economical and packed with nutrition. Like this delicious Hearty Borscht. |
