Mint "Chocolate" Truffle Bites (AIP)

Chocolate. That wonderful thing you miss once you start the Paleo Autoimmune Protocol. Don't worry, with just a few minutes and a few ingredients you can eat something chocolatey again.
This "chocolate" recipe uses carob powder to replace cocoa. Now, I admit carob is no exact replica of chocolate. But when used the right way it is a VERY close substitute! You'd swear that these were real chocolate-mint flavour. Which makes me very excited! Chocolate mint and I are BFFs from way back. Oh, how I missed you. These fudgey, minty, bites of deliciousness will take care of your chocolate (& mint) cravings! Plus, they are super healthy and pack a good punch of healthy fats.

A bonus of using carob powder is it's natural sweetness. The sweetener in this recipe is optional, as the sweet potato, coconut & carob are all sweet on their own. Perfect if you're really needing to watch your sugar intake. And yes, I said sweet potato. Don't be weirded out; it is really the magic ingredient here. Trust me.

Mint "Choclate" Truffle Bites (AIP)

Ingredients
  • ​1/2 cup coconut butter, melted
  • 1/4 cup sweet potato purée
  • 3 Tbsp. + 1 Tbsp. roasted carob powder
  • 2 Tbsp. coconut oil, melted
  • 12 drops peppermint oil
  • 1/4 tsp. pink salt
  • maple syrup to taste (0-3 tsp.)

Method
  • NOTE: The use of the maple syrup is optional. I suggest starting with either none, or try 1 tsp., and then increase if desired. (The carob and sweet potato provide natural sweetness so you may not need any maple syrup.)
  • ​Place all ingredients *except 1 Tbsp. Carob powder* in a mixing bowl, mix (with hand-held or stand mixer) well - until mixture is well combined and looks whipped (the colour lightens).
  • Place the bowl in the refrigerator for 10 min. (Allows the mixture to firm up a bit.)
  • Place the remaining 1 Tbsp. of carob powder into a small bowl.
  • Remove mixture from fridge and roll 2 tsp. into a ball (in your palms). Then place it in the bowl with the carob powder and shake it around until coated. Place in a glass container.
  • Repeat previous step until all is used up. You should get about 16 Truffle Bites.
  • Place the Bites in the fridge to firm up again. Enjoy at room temperature.
  • Store these in the fridge or freezer (allow to defrost).

I've made these delicious littles bites twice in the past two weeks. Thank you for sharing it. This week, I added chopped dates and some finely shredded coconut. I'm really going to have to work on not overi indulging on thses.
