Herbed Dinner Bread Rounds. AIP recipe. Paleo Autoimmune Protocol.

Let's admit it. Giving up bread products is difficult. While I don't eat a lot of them now I am on the AIP, I can still satisfy a craving once in a while. Like with this bread. It may not look like much, but don't be fooled. This dinner bread hits the spot; especially paired with soup, stew, or chili.
When I was developing this recipe, I was out to make something savoury and full of flavour that had a satisfying texture. I was so happy when (after a few tries) I nailed it - there may have been a happy dance in my kitchen!

​The seasonings are inspired by an ald favourite of mine - onion cheese bread. The nutritonal yeast gives it lovely cheesy flavour & the herbs add some zest. These have a texture somewhere between a biscuit and a flatbread. You get crispy, chewy, & soft all rolled into one!

Herbed Dinner Bread Rounds

Yield:  8 rounds

Time:  25 min.

Ingredients
  • 1/2 cup white sweet potato, cooked & mashed
  • 1/2 cup arrowroot powder
  • 3 Tbsp. coconut flour
  • 2 Tbsp. coconut oil, melted
  • 1 tsp. apple cider vinegar
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 2 Tbsp. nutritional yeast
  • 2 tsp. onion powder
  • 2 tsp. oregano
  • 1/2 tsp. garlic powder

Method
  • Pre-heat oven to 350F.
  • In a medium bowl, mix together the sweet potato, coconut oil, & apple cider vinegar until well combined.
  • In another bowl, stir together the remaining ingredients. Add to the wet mixture and mix until combined. The mixture will still appear very crumbly. Knead it by hand until a soft (cookie dough texture) dough forms.
  • Pat the dough out on parchement paper to about 1/3in. thickness. Cut 8 rounds (approx. 4in. diameter) out with a cookie cutter or drinking glass. Using a thin metal spatula, lift & place each round onto a parchment lined baking sheet.
  • Bake for 12 min. Remove pan from oven and flip each round over. Return to oven and bake another 6 min.
  • Let cool a few min & serve warm. Or quickly re-heat if using from room temperature.

Tip: Use these bread rounds as slider buns or for appetizer style sandwiches.
